Ingredients
250g pasta (penne, fettuccine, or any other type you prefer)
1 cup raw cashews, soaked in water for at least 4 hours or overnight
2 cups unsweetened almond milk (or any other plant-based milk)
2 tablespoons nutritional yeast
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons all-purpose flour
1 teaspoon onion powder
1/2 teaspoon ground nutmeg
Salt and pepper to taste
Fresh parsley, chopped (for garnish, optional)
Instructions
Cook the Pasta
Bring a large pot of salted water to a boil.
Add the pasta and cook until al dente.
Drain the pasta and set aside.
Prepare the Vegan White Sauce
Drain the soaked cashews and rinse them under cold water.
In a blender, combine the soaked cashews, almond milk, nutritional yeast, garlic, onion powder, and nutmeg.
Blend until smooth and creamy. Set aside.
Make the Roux
In a separate saucepan, heat the olive oil over medium heat.
Add the flour and whisk continuously until a paste forms (this is called a roux).

Slowly pour the blended cashew mixture into the saucepan with the roux, whisking constantly to prevent lumps from forming.
Bring the sauce to a simmer and cook for 5-7 minutes, stirring occasionally, until it thickens to your desired consistency.
Season the sauce with salt and pepper to taste.
Assemble the Pasta:
Add the cooked pasta to the saucepan with the white sauce.
Gently toss the pasta in the sauce until it is well coated and heated through.
Serve
Transfer the vegan white sauce pasta to serving plates or bowls.
Garnish with chopped fresh parsley if desired.
